Cacao extract is derived from cacao beans that have been dried and fully fermented, with the fatty cocoa butter first being separated off. Cacao originated in Central America and has been used for thousands of years. The trees grow in hot, rainy tropical areas within 20° of latitude from the Equator, and in many countries the beans can be harvested at any time of year. Unfortunately, the use of chemical pesticides and fungicides is not an uncommon practice in cacao farming, most of which is in Africa.
