Cacao extract is derived from cacao bean that has been dried and fully fermented, with its fatty cocoa butter first being separated off. Cacao originated in Central America and has been used for thousands of years. Cacao trees grow in hot, rainy tropical areas within 20° of latitude from the Equator. In many countries, cacao can be harvested at any time of the year. Unfortunately, chemical pesticides and fungicides are often applied to the trees.
